Chocolate Peanutbutter Deliciousness


Hola chica's (and chico's!!) I know that it has been about 3 weeks since my last post --total insanity I KNOW! However, I have been crammed with tests and lacrosse season started last Friday limiting my after school baking and blogging time.  Oh yeah AND I took the SATs this past Saturday, be jealous. 

Anyways, there was a ginormous storm in the tri-state area, well at least in my town, and it looks like a war-zone.  Tree's are uprooted and crashing into roofs, its like a maze trying to get anywhere with all the roads blocked and power is a rarity.  Seriously, I have been out of power since Saturday evening --my house is so cold! Luckily the power is starting to come back on and I was able to escape to my best friends house...YAY for Leslie!!  Now onto the baking:

This time aroung I made a cookies thats melds the classic flavor combo of chocolate and peanut butter into one decadent treat --A Chocolate Peanut Butter Cookie WITH a Surprise filling (the surprise is a peanut butter confection in the middle!!) Oh man --just too good to keep a secret for that long.

The batter was super sticky at first but not difficult to work with. 

In a medium mixing bowl stir together flour, cocoa powder, and baking soda; set aside.
In a large mixing bowl, beat together the butter, brown sugar, granulated sugar and peanut butter until combined.

Then add the egg, milk and vanilla and beat well.  Reading through the recipe again to type it here I realized that I did NOT add in the tablespoon of milk like I was supposed to but mine still states delishh! But whose to say it wouldn't be better if I did add it...guess I have to make them again!!

Now add in as much of the dry ingrediants as possible --I was able to get it all in but if you can't just beat the rest in by hand.  And mix until the dry ingredients disappear.

Once the batter is done, form into balls about 3/4 of an inch.  I was able to get 38 out of it.

Now for the best part! Time to clean the mixing bowl!! Haha totes being sarcastic...I'm not the biggest fan of cleaning but you gotta do what ya gotta do!

So once the mixing bowl is clean and dry beat together 1/2 cup of peanut butter and 3/4 cup of powdered sugar

But no fret because it will soon look like this:

Time to fill --slightly press all of the dough balls down into a flat disc

Then dollop (Oh goodness I just love that word) some of the peanut butter mixture onto each disc

Then wrap the dough around the peanut butter filling and place on a baking sheet. 

Sprinkle with some granulated sugar and bake.
mhmm....

That filling is mesmorizinggg! Ignore the blur factor..

Cammy Update! We brought it to the store and they have to ship it out to fix it.  It's gonna take about 1 month (I know--sorry you have to look at these blurry pics)
But there is good news!! For my birthday my mom was planning on getting me a camera to take to Italy with me.  We were going to go today but it might have to be post poned...

Ingredients:
  • 1-1/2  cups all-purpose flour
  • 1/2  cup unsweetened cocoa powder
  • 1/2  teaspoon baking soda
  • 1/2  cup butter, softened
  • 1/2  cup granulated sugar
  • 1/2  cup packed brown sugar
  • 1/4  cup peanut butter
  • 1  egg
  • 1  tablespoon milk
  • 1  teaspoon vanilla
  • 3/4  cup sifted powdered sugar
  • 1/2  cup peanut butter
  • 2  tablespoons granulated sugar 
Directions:
  1. Preheat oven to 350 degree F. In a medium mixing bowl stir together flour, cocoa powder, and baking soda; set aside.
  2. In a large mixing bowl beat together butter, the 1/2 cup granulated sugar, brown sugar, and the 1/4 cup peanut butter with an electric mixer until combined. Add egg, milk, and vanilla; beat well. Beat in as much of the dry ingredients as you can with mixer. Stir in remaining dry ingredients by hand with a wooden spoon. Form chocolate dough into 32 balls about 1-1/4 inches in diameter. Set aside.
  3. For peanut butter filling, in a medium mixing bowl combine powdered sugar and the remaining 1/2 cup peanut butter until smooth. Shape mixture into 32 (3/4-inch) balls.
  4. On a work surface, slightly flatten a chocolate dough ball and top with a peanut butter ball. Shape the chocolate dough over the peanut butter filling, completely covering the filling. Roll dough into a ball. Repeat with the remaining chocolate dough and peanut butter filling balls.
  5. Place balls 2 inches apart on an ungreased cookie sheet. Lightly flatten with the bottom of a glass dipped in the 2 tablespoons granulated sugar.
  6. Bake cookies in preheated oven for 8 minutes or until they're just set and surface is slightly cracked. Let cookies stand for 1 minute. Transfer cookies to wire racks; cool. Makes 32 cookies.
