I took my favorite chocolate chip cookie recipe (found here), omitted the espresso powder and added a cup of coarsely chopped pretzels.
The cookies are super simply to make but I realized I never posted the step by step pics!! Oh no how silly could I be! So here it goes:
Here's what you will need:
1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1-3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chopped Pretzels
1 1/2 cups semi-sweet chocolate chips

Preheat the oven to 300 degrees.
Start by combining the flour, baking powder, baking soda, and salt in a mixing bowl.
Then cream the butter with the sugars (brown and white) using an electric mixer on medium speed until fluffy (approximately 30 seconds)
Add in 1 egg
and two teaspoons of vanilla
mix until nice and combined
Then add in the dry ingredients--I add it in all at once because I don't have too much patience when it comes to these cookies
and mix (slowly at first) otherwise your have flour in all the nooks and crannies of your kitchen (mother is never a fan)

It is time for chocolate chip and pretzel time!!
(BTW here is where you would add the espresso powder if you wanted to make the usualy chocolate chip cookies)

oh yeah I may or may not have just skipped the whole place by spoonful on a greased cookies sheet and cook for 20 minutes but here's what happens AFTER that minor step of wait occurs:

- In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in thepretzels and chocolate chips.
- Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.
