Anytime Salmon Cakes

So my blog will be 1 years old in 6 days and my goal was to have 100 posts by then! However, I have not had as much time as I would have liked to this summer to blog considering I am in school for 6 hours 4 days a week and work four days a week as well. Not to mention, I am writing my college essays and working on my college applications...luckily I work as a life guard otherwise I don't think I would even see the sun this summer...

 And I have been cooking, a lot and creating delicious pairings (which will be featured on my new website!!!)

Oh silly me, I forgot to let you know, I have been working with a graphic designer and we are creating the Cookteen website! She's awesome and I am so excited!!! Hopefully everything will be done by the end of August so keep a look out.  We will be having some fun give aways to celebrate when the site is launched.


Anyways, one morning before work I made breakfast for my family.  The previous night we had salmon for dinner and with the one extra piece left over,  I decided to use it for breakfast!! The original plan was a spin-off of lox, eggs and onions (except cooked salmon instead of lox). But then I remembered the delicious salmon cakes my mom used to make with leftover salmon as a little appetizer to dinner and I decided to make them for breakfast!

These are super easy to make and don't require too many ingredients: eggs, salmon and Matzo meal.  Bread crumbs could work but you would definitely need more of them because they aren't as absorbent.  I learned that when I accidentally made my Milk-Chocolate Potato Chip Tart with flour instead of Matzo meal.  That was one sticky mess.

These were made for 4 (my whole family) so I cracked six eggs into a large container. A bowl would have been normal but I reaaaaaalllly wanted to fluff them up and avoid getting egg everywhere and need the extra comfort of having tall plastic walls around the egg.

After whipping the eggies, add salt and pepper not to taste.  Raw eggs should not be consumed.  Unless in a delicious cookie batter, but you didn't here that from me...

Star of the show: salmon!! This was approximately 4-5 oz of cooked salmon.  Just dump it in, it will flake when you mash in the eggs.

Last ingredient is the Matzo meal! I used whole wheat because that was in the pantry (yes we still have matzo meal from Passover)  No matzo meal lying around? Use around 1/2 cup of breadcrumbs instead of the 1/3 cup of matzo meal.

Heat a skillet with a bit of butter.  Mix the concoction until uniform and then dollop onto the skillet.  Cook for 3-5 minutes on one side and then flip and cook until patties spring back to touch and are fully cooked.

You might need to cut the first one in half to see how long it takes  on your stove.

To heat them up after they are all cooked, just throw them all in the pan for a minute or two to bring back that outer  heat that was lost while you cooked the others.

Recipe:
Ingredients:
6 eggs
4-5 oz cooked salmon
1/3 cup Matzo Meal
Salt and Pepper

Crack the eggs into a bowl and whip until nice and airy.  Salt and pepper (I am really tempted to say "to taste" but please don't taste raw eggs).  Add in the salmon and mash with fork to flake and mix.  Stir in the matzo meal.

Heat a skillet with a bit of butter (or Pam if your into that type of thing) and spoon mixture (like pancakes) onto it.  Cook for about 3-5 minutes and then flip and cook until thoroughly cooked.  Serve with cream cheese.
