Enter Chocolate Peanut butter No bake cookies.
As I was perusing Brown Eyed Baker, a blog I absolutely adore, I noticed she said that her most viewed recipe was these cookies and well how can I not make them?!
I was meeting my friends for lunch in an hour before one of them left for a few weeks and thought these would be perfect to bring as an after lunch treat. The cookies did not take that long to make. I was able to make cookies and get ready in that hour. However, it was an extremely hot day and well I didn't think that chocolate would survive baking in my car while we ate lunch so I left these at home in the fridge. No fret, they were devoured by some of our guy friends later that evening :) After of course Daddy and I ate a good portion of them... They are addicting, don't judge ;)
Seriously though you should make these, there is a reason they are the most viewed recipe...THEY SO YUMMY!! While I am not a fan of chocolate, I seem to crawl back to the chocolate and peanut butter combination time after time after time after time.
Take out all the ingredients: butter, sugar, milk, cocoa powder, peanut butter, vanilla extract, and quick cooking oats
Combine the butter, sugar, milk and cocoa powder in a saucepan
And bring it to a boil
Then stir in the peanut butter, vanilla and a handful of toffee bits if your heart desires. Mine always does...

It looks like a donut! Oh I could really go for a donut now...
Toss in some extra toffee bits just for kicks
Then dollop onto a cookie sheet prepared with wax paper. I used two cookie sheet by the way.
Then give them a few moments to solidify and VOILA: magnificence

Recipe: (Adapted from Brown Eyed Baker)
Ingredients:
½ cup (1 stick) butter
2 cups granulated sugar
½ cup milk
4 tablespoons cocoa powder
½ cup peanut butter
2 teaspoons vanilla extract
3 cups quick-cooking oats
Handful of toffee bit (optional)
Add the first four ingredients (through the cocoa powder) to a 4-quart saucepan. Bring to a rolling boil and let boil for 1 minute. Remove from heat. Stir in the peanut butter and vanilla until smooth, then stir in the oats. Drop by heaping tablespoons onto wax paper-lined baking sheets. Let cool until set.
