Two Cinnamalicious Recipes: both around 100 calories

I have always been a healthy eater.  I munch on carrots and celery.  My lunch consists of a veggie burger on a sandwich thin, a red pepper cut up, an apple and a bag of carrots.  My parents think I was once a rabbit in a former life.

Many peoples new years resolutions is to loose weight or eat healthier in general.  I have been an avid follower of Hungry-Girl, and even though I find her recipes have too many ingredients which add up in cost, I have used and adapted some of her recipes to indulge in lower calorie treats.

Here are 2 delicious recipes that my family and I all love and have been making for a while now.

The "Baked" Apple:
As you know from the Apple Pies on a stick post, I love apples.  This dessert has been one of my favorite for as long as i can remember for two reasons.  Firstly, because it has cinnamon.  Anything that is cinnamon-y is delicious! Secondly, because it is super simple and I can make it just for me.  Unlike cupcakes, where you have to bake a bunch. 




Wash, peel and core an apple (or two --about however many people will be eating but best made in smaller batches)

 
Once peeled and cored, cut into chunks or slices.  I like it both ways but shown is slices.  Chunks maintain a little more of a bite if not cooked longer.

If you are cutting up more than one apple, place apples in a cup of water with a little bit of lemon juice to prevent browning.  If not just toss right into a small saucepan.

 
Add 2 teaspoons of cinnamon.  I love a lot of cinnamon so you may want to use 1 and a half if your not obsessed like me. 


Then add a few (3-5) packets of Splenda OR 1 Tablespoon of Splenda.  If cooking with real sugar use around 2-3 Tablespoons.

Then add some water.  Getting the right amount of water is tricky.  I add around a scant 1/4 cup of water.

 
 

Place on the stove and cook on medium heat until apples are tender, stirring them as you cook.


The liquid will begin to simmer.  Allow to simmer a bit then stir the apples.  Repeat until apples are cooked to your preference.  This can take between 5-10 minutes.

Pour into a bowl and eat.

Cinnamalicious Toast:
 
This is perfect at any time of the day.  Whether for breakfast with a glass of tea (or coffee) or dessert with some milk, it curbs even the strongest sweet tooth (aka --my daddy's)

You can make this in a frying pan or in a toaster oven.  We replaced our toaster oven with a regular toaster, so I made this in a frying pan.  But over the summer, the toaster oven worked the same.

NOTE: I recommend toasting the bread in a toaster oven or toaster first if using a frying pan.


Either use a sandwich thin (shown) or 2 slices of 40 calorie bread...lightly toast.

 
Then spread with brummel and brown (or any other low calorie/low fat butter spread)  I Can't Believe It's Not Butter is a good substitute as well.

 
Sprinkle each side with a packet of Splenda

and some cinnamon.

Place face down into a frying pan (coated with some Pam) and cook on medium low for a minute or less.  
Splenda is all chemicals so it doesn't take much for it to burn, be careful!  If it is black is doesn't means it has a burnt flavor fyi!

 
Then cook the back side to toast it up a bit more.


Then, flip back over for a few more seconds.


And serve hot.  Seriously, clean the pan later, this has got to be eaten warm.

  1. those apples look so yummy! i did something kinda like that a few months ago and served them over pumpkin pancakes. mmm i'm hungry now!
