Oatmeal (C)Raisin Cookies

So I really wanted to share the cupcakes I made for the fourth of July but my computer and/or camera are being funky and saying I can't upload pictures but don't fret because I still got something for you!
These are very good cookies.  I mean so good they wont last sitting on your counter.

Oatmeal cookies = yummy.  Oatmeal raisin cookies = blech.  I am not a fan of the wrinkly fruits but will choose Craisins over raisins any day.

I made these extra large, 1/4 cup batter per cookie, and baked them for around 15 minutes to achieve a gooey and chewy center with a semi-crispy edge--perfection my dears.
These are made via the "creaming" method (as I learned on Good Eats) so to begin, cream the butter until super creamy (light and fluffy)

Then add in the light brown sugar. granulated sugar, baking soda, baking powder, salt and cinnamon and mix until smooth.

Then its time to add in the vanilla and then the eggs

Starch time! Flour and oats (making my way through the oats slowly but surely)
First flour, then oats
Mix with mixer until all incorporated

Well the batter is complete, however, to take these to awesomeness I added in four different mix-ins: walnuts, white chocolate chips, craisins and semi-sweet chocolate chips
Mix with a rubber spatula until homogeneous

NOW the batter is extra delicious! Use your 1/4 cup measurer and fill for each cookie.  You could divide each "lump" in half for smaller cookies (if you wanted, but I love giant cookies!)

True fact: They were still a bit soft in the center when I took them out and while transferring one to the cooling rack, if fell apart and oh boy was it delicious! Warm chocolate chips, gooey brown sugar, starchy oats and a hint of cinnamon--the perfect cookie for Cookteen :) 

I brought a batch of these to work the other day and they were a hit! And just what we wanted to have after working in the hot sun for a few hours...cookies make good snackage.

Off to sleeps for a LONG day of life-guarding tomorrow! Hopefully I will get to show you my rad cupcakes, teaser alert: they had tye-dyed frosting!!

3/4 cup butter
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon vanilla
2 eggs
1 3/4 cup flour
2 cups oats
1/2 cup white chocolate chips
1/2 cup craisins
1/2 cup walnuts
1/2 cup chocolate chips

Preheat the oven to 350 degrees and grease 2 cookie sheets with butter of Pam.  Cream the butter and light and fluffy.  Add in the brown sugar, granulated sugar, baking powder, cinnamon, salt and baking soda.  Mix until all ingredients are incorporated.  Then mix in vanilla and eggs.  

First add in the flour and mix until incorporated.  Then add in the oats and mix until combined.  Stir in the craisins, chocolate chips and walnuts.  Drop by the 1/4 cup onto a greased cookie sheet, slightly flatten and bake for about 15 minutes.
